Annas Gluten Free Potato And Spinach Curry Recipe

What You Need to Make This Curry
- 2 Cloves Garlic (chopped)
- 1 Medium Onion (finely chopped)
- 1 tsp Curry Powder
- 1 tsp Ground Coriander
- 1 Can of Tomatoes
- 8 Small/Medium Potatoes Peeled and Chopped into small chunks
- 2 Cups of Spinach (fresh or frozen)
- Olive Oil
- 1 Tablespoon Sugar
- 2 Teaspoons of Rice Wine Vinegar
- Salt To Taste
- Water
How To Make This Curry
Fry the curry powder, garlic and onions in a generous portion of olive oil, it is important not to let this dry out add more olive oil if needed. Cook the mixture until the onions have sweated out and softened. Then throw in all the ingredients with 1 cup of water into the pot and boil until the potatoes are soft (45mins - 1 hour)
Serve with rice and add salt and pepper to taste.
Great for a cold winters night.
