As you know I am on a bit of a mission to drop my Christmas insulation after stepping on the scales at a WHOPPING 80kgs on the 6th of January this year. I plan on doing this through making small modifications to everyday eating and life style in hope that I can build a healthier life (and body) for myself in 2014.
One things I am having great success with is my go to breakfast which consists of 2 Medium Boiled Egg seasoned with Salt & Pepper and a Double Espresso.
- 160 Calories for two medium sized eggs
- 2 Calories for the espresso
- Salt and Pepper (I could not find a measurement for this in my fitness pal)
I am not much of a breakfast person, I don’t drink milk and I find if I have cereal it spikes my insulin levels and I am STARVING in an hour or two. The protein in the eggs seems to keep me satiated will into the afternoon and curb my sugar cravings and I am just not getting as hungry as I would eating toast, cereal or other breakfast options.
Here are some more details on perfecting medium boiled eggs I have found on my gas stove 11 minutes from cold is perfect for getting the egg whites cooked and the yellow still soft but not snotty.
- 2 Medium sized eggs
- Pot of cold water
- Place the two eggs in a pot of cold water. Ensure the eggs are completely submerged into the water.
- Turn on the element to a medium to high heat
- Cook for 11 minutes from cold.
- Remove from the stove and soak in cold water for 5 minutes
- I like to cook up 4 or 6 eggs at a time as sometimes the 16 minutes in the morning slows me down a little. If you want to heat them up you can zap them for a few seconds in the microwave.
