I am all about meal prep on a Sunday that will last me through 3 or 4 days. This frees me up to do the things I enjoy, like get to yoga class, bike or hike. These caramel apple chia pots are perfect as they can tide you over at any meal, and make a great breakfast on the go. I whip mine up in mason jars (or old jam jars) and take them to work with a spoon.

Caramel Apple Chia Pot Ingredients:
- 2 Tablespoons of chia seeds
- 2 Tablespoons of desiccated coconut
- Ground Almonds
- 1/2 an Grated Apple
- 2 Dates
- 1/4c Almond milk
Place the chia seeds, coconut, and almond milk in a container and stir constantly until they start to absorb the the almond milk. Add the apple, cinnamon and chopped dates and stir well. Place in the fridge overnight, stirring occasionally to stop the chai seeds from congealing at the bottom of the container.
Serve your Caramel Apple Chia Pot with a spoon of coconut yogurt and slithered almonds. It is also great in Feijoa season if you like a spot of tartness and an extra vitamin c boost.
