curried cauliflower fried rice
There is something about winter that makes my body instantly start to pack on the pounds. It think the colder weather leads to eating more warm comfort foods and far to many carbs. So this winter in an effort to stay healthy and avoid the winter chub I am trying to substitute carbs from grains with carbs from vegetables. 

I have seen heaps of people “ricing” cauliflower on pinterest and decided it was time to put the grater in my new food processor to good use.

Ricing cauliflower basically involves grating up a raw cauliflower so its about the same size as white rice. 

* Full disclosure – It has been sitting on my bench unused for about a month since I bought it as I could not think of a single thing to make with it.

Anyway here is what you need to make my curry cauliflower fried rice recipe. If you don’t like curry flavours. Leave it out – it still tastes great. 

Ingredients

2 Rashers of Bacon Chopped.
2 Medium boiled egg
1/2 cup frozen edamame beans
1/2 cup frozen corn
4 Garlic Cloves
1 Onion
1/2 Head of Cauliflour “Riced”
Tamari (gluten free soy sauce)
1 Teaspoon of Curry Powder
1/2 Tablespoon of butter
1 Tablespoon seasame Oil
1 Tablespoon of Coconut Oil
A pinc Salt

Instructions

  1. Rice the cauliflower by grating it by hand or in the food processor
  2. Heat the oils and butter in a pan.
  3. Saute the garlic, bacon, onions and curry powder until the onions are translucent then add a pinch of little salt to draw out the moisture.
  4. Pour 2 tablespoons full of water into the pan, and de glace the bottom of the pan to get the yummy onion flavours into the rest of the dish
  5. Add the edamame and corn and stirfry for 5 minutes.
  6. Chop up the hardboiled eggs (or scramble them – I just used these as I had them in the fridge).
  7. Add the cauliflower , eggs & tamari sauce and cook for a futher 4 minutes.
  8. Serve immediately.

OPTIONAL EXTRAS

  1. You can mix things up by adding more protein like prawns, chicken or beef. And more greenS

SERVES 2 HUNGRY PEOPLE

I had the second helping for lunch today and while it still had great flavour, the texture wasn’t as good. So I would suggest you eat it on the night you make it. 😀
