Gluten Free Breakfast Loaves Recipe

These are great for gluten free breakfasts. I thaw them out from the freezer the night before... and they are handy to take to school or work...Delish!

Gluten Free Ingredients


1 Large Kumara Diced
1 Large Leek Sliced
2 Grated Zucchini
1 Cup Gluten Free Baking Mix
1 Tablespoon Dried Italian Herbs
4 Eggs
1/2 Olive or Canola Oil
1/2 c Rice Milk
20g Crumbled Sheeps Feta
1 Cup Chopped Chorizo and Sliced Ham
Salt and Pepper to season.

Lets Make Gluten Free Mini Loaves



Cook the vegetables in the microwave for 6 minutes on high.

In a large bowl mix the cup of baking mix, herbs, eggs, oil, rice milk, Cheese, Meat and mix well. Add the vegetables and season with salt and pepper.

Spray a deep baking dish or Texas muffin pan with oil.

Cook on 200 Fan bake for 15-20 minutes. Cool for 30 minutes before eating.

gluten-free blah blah, not really the alternative

I'm getting really irritated by the amount of recipes for gluten-free baking that instead of giving alternative flours (such as cornmeal, polenta, sesame flour, rice flour) just list 'gluten-free all purpose flour' in the ingredients. If all I'm going to do is replace the wheat flour in the recipe with supermarket bought 'ready made' gluten-free flour, then I have plenty better recipes than this one!

I tried making these loaves. I changes the meat to chicken and I added a little parsley to the recipe.
