I use the word omelet loosely as this was more of a scramble due to my inability to get the pan the right temperature.
3 Eggs (size 7)
1 Tablespoon crumbled goats feta
1/2 c left over roast vegetables cubed
1/2 c left over roast chicken shredded
Salt
Pepper.
Mix this well a bowl and add to a medium heat pan and reduce the heat to low/medium heat and cover.
Keep an eye on the mixture to make sure it does not burn - the secret is to cook it slowly so it does not dry out and stick to the pan.
If you are like me and the omelet just will not omelet... opt for a scramble!
