Gluten Free Fritatta Recipe - corn n bacon

6 Eggs
1 Can Creamed Corn
1/2 Red Onion
1/2 Capsicum
1/2 C Broccoli
4 Rashers of Bacon
Salt & Pepper To Season.
1 Few Chunks of Feta


Pre heat the oven to 160 fan bake.

In a large bowl beat the 6 eggs

Dice the Bacon and Vegetables.

In a hot oiled pan cook the bacon and vegetables until soft and golden.

Crumble the Feta into the egg mixture.

Pour half the egg mixture into a well greased cake dish (I used a silicone round cake pan which is easy to clean).

Combine the Vegetable and bacon mixture into the bowl and mix well - then add to the cake pan.

Place onto the middle shelf of the oven and cook for 25 minutes.

You may need to put it on the higher self for the last few minutes of cooking. Remember that the fritatta will continue cook after you take them out of the oven so it is okay if the mixture seems a little soft.

Allow it to cool for 5 minutes and serve with a green salad.

*for more vegetables add grated zucchini.
