Gluten Free Recipe Fish Cakes

1 Big Tin Tuna
1 Cup Cooked White Rice
1 Carrot (grated)
1/2 Capsicum (grated)
1 Zucchini (grated)
1 Egg
Salt and Pepper to season.
1/2 Onion (diced)
1/2 Teaspoon Garlic (diced)

In a pan saute the garlic and onions.

In a large bowl combine all of the ingredients and mix well.

Take large spoonfuls and shape into patties.

Heat a non stick frying pan to a medium heat and cook the patties for 3 minutes on either side with the lid on (or until cooked).

Serve with home made potato wedges and salad with a little balsamic.
