Gluten Free Recipe Fish Cakes

Ingredients
- 1 Big Tin Tuna
- 1 Cup Cooked White Rice
- 1 Carrot (grated)
- 1/2 Capsicum (grated)
- 1 Zucchini (grated)
- 1 Egg
- Salt and Pepper to season.
- 1/2 Onion (diced)
- 1/2 Teaspoon Garlic (diced)
Instructions
- In a pan saute the garlic and onions.
- In a large bowl combine all of the ingredients and mix well.
- Take large spoonfuls and shape into patties.
- Heat a non stick frying pan to a medium heat and cook the patties for 3 minutes on either side with the lid on (or until cooked).
- Serve with home made potato wedges and salad with a little balsamic.
