Gluten Free Recipe: roast chicken stuffed with lemon and garlic with tuscan roasties

1 Size 20 Chicken
1 Roasting Bag
4 Potatoes
2 Kumara
2 Onions
1/4 Pumpkin
6 Cloves or Garlic
3 Lemons
Tuscan Seasoning.

Pre-heat the oven to 180

Place Chicken into the roasting bag and Squeeze Lemon onto the chicken. Stuff the Chicken with squeezed lemon and 4 cloves of garlic. Tie the bag and place on an oven tray and into the oven. - Cook for 2 Hours (or until juice runs clear)

Chop the Potatoes, Peeled Kumara, Pumpkin & Onion and remaining garlic and place on a roasting tray. Spray with oil and sprinkle with Tuscan seasoning. (cook for 45mins to 1 hour).

Season with salt and pepper... great with a little feta! YUM
