Gluten Free Recipe Stuffed Zuchinni

Ingredients
- 3 Large Zucchini's
- 200gm Mince Meat (beef or pork)
- 1/2 Onion
- 1 Grated Carrot
- 1 Egg
- Salt & Pepper
Instructions
- Cut Zucchini in half and hallow out the middle.
- In a bowl combine mince, Zucchini flesh (the middle part you have hallowed out diced) onions, carrot, egg, salt and pepper.
- Stuff the Zucchinis with the mixture and bake in the oven for 3/4 hour to 1 hour (until the meat is cooked) on 160 degrees.
- Serve with Rice - this dish is great sprinkled with a little Parmesan.
