Gluten Free Snack of The Day Corn and Bacon Muffins

These little babies make a great snack or breakfast if you are on the go.

I generally use a savoury muffin mix with mine - as getting the right amount of gluten free gluten can some times be hard to master... and there is nothing worse then a dry muffin.

They are best eaten fresh or heated in the microwave with a little butter or onion relish (gluten free products seem to dry out easily so I always heat or toast).

I just add my favourite corn, feta and bacon to the muffin mix along with a few herbs... delicious.
