Use the left over fried rice from last nights dinner and serve in a iceberg lettuce cup for a delicious healthy snack with crunch and flavor.

This is a great way to reuse left overs when you do not have that many and is a healthy alternative to a spring roll.

You can serve the rice hot or cold and this snack is very portable in a lunch box.
