I gathered together last nights left overs to make one of the best salads I have had in a long time.
All it took was:
Left over roast vegetables
Feta Cubes
Spinach
Spring Onion or Red Onion
Left over spinach and feta pesto.
Microwave for one minute and savor....
To make this into a meal I would add chickpeas for protein.
Warning - SO GOOD you will wish you had more!
