Gluten Free Stuffed Lettuce Leaf

One of the biggest problems about being gluten free is how much it costs to buy the gluten free version of normal food. What I mean by that is that wraps and burrito making ingredients seem to contain wheat... or cost an extra few dollars!

So I have come up with this fantastic recipe.

1 Can Tuna
1 Can Salsa Chilli Beans
1 Ice Berg Lettuce.
Grated Carrot
Cheese.

Heat the tuna chilli bean mix until warm (also fine cold) Spoon 2 tablet spoons of the tuna mix with carrot and cheese into a large iceberg lettuce leaf and roll up.

Easy to hold onto and eat.

Tastey fresh summer snack.

Well how easy was that?????.......I am learning very fast that the retail world is out to rip the healthy and the sick off, I have bought the crappy gluten free wraps and never EVER thought of a lettuce leaf, even though I chop them up FOR my wraps.....lolol
