 After a bit of a shock in the New Year when I stepped on the scales to see I had put on a whopping 6kgs in recent months, I am trying to drop some weight by taking more of a “french womans” approach to weight loss. There will be no complete deprivation of food and calories, but rather modifications to my everyday eating to lower the calories from day to day… and leave me a little wiggle room to eat out with friends (and bake).

One of those key modifications is salads. I am going to be experimenting with the world of greens and trying some new vegetables to lighten up my day.  I think the key to a good salad is to mix it up each time you eat it so you do not get bored. So far this salad has been remixed 3 times.

That way it doesn’t feel like ” boring old salad”.

I also decided to try out a local fruit and vegetable delivery service, that way I get seasonal vegetables and its fairly affordable. I despise supermarket shopping so I think that this might be a great way for me to avoid the temptation of potato chips (my kryptonite) diving into my trolley.

Easy Chicken and Linseed Salad
Serves 1
A light 370 cal salad thats great for a balanced lunch

Ingredients
  1. Fancy Lettuce 2 leaves
  2. Spinach 1 c
  3. Red Capsicum 3 Slices Diced
  4. Cucumber 1/2 chopped into chunks
  5. Carrot 3 Sticks Diced Carrot
  6. Spring Onion 1/4 Sliced
  7. Red Onion 15g Chopped
  8. Feta 30g
  9. 100g Shredded Chicken
  10. 1 teaspoon of linseeds
Instructions
  1. Simply slice or dice your veggies and toss in a bowl.
Notes
  1. I like to make enough for 3 or 4 servings to help make sure I eat pleanty of green things and always have a healthy side to go with my meals.
