I have been testing out a new fruit and vegetable delivery service which left me with an excess of potatoes this week. I often pop an egg on a hash brown in the morning, so I wanted to try my hand at making my own.  I have stopped preparing my own potatoes for the last few years, just purchasing frozen mash in a bag or box hash browns if the urge for potatoes strikes.

Potatoes and oral allergy syndrome

As you may know I have oral allergy syndrome which can be a bit of an issue when dealing with raw potatoes as they make my hands itch, which usually results in me scratching them to the point that they crack and weep and become covered in dermatitis. 

Overcoming oral allergy syndrome when cooking

I invested in some bulk packs of rubber gloves to help keep my delicate hands protected when I am chopping and peeling potatoes, white or red onions, citrus fruits, pineapple, strawberries, stone fruits, kiwi or carrots. This seems to keep the oral allergy syndrome at bay and avoid dermatitis. I have to avoid eating these fruits and vegetables raw otherwise I get an itchy mouth, tongue and dry itchy patches on the sides of my lip creases down to my chin (not so pretty).

Despite this I still love to munch on cooked potatoes. So here is my recipe.

Serves 3
Delicious gluten free potato cakes perfect base for your evening meal, lunch or reheated for breakfast the next day

Ingredients
  1. 6 Medium sized potatoes
  2. a few shakes of Herb and Garlic Seasoning
  3. 2 Tablespoons Butter
  4. Salt & Pepper
  5. Pinch of chilli powder
  6. (chives would go good in this if you have some)
Instructions
  1. Grate the potatoes into a bowl.
  2. Squeeze out excess liquid using your hands.
  3. Add all of the seasoning and mix together thoroughly.
  4. Heat half the butter in a pan on a medium heat.
  5. place handfuls of mix onto the pan (you should form 6 small patties)
  6. Cook until golden on each size (around 10 minutes each side).
Notes
  1. Serve topped with bacon and spinach for a delicious dinner.
  2. Top with smoked salon for a delicious breakfast.
  3. Make a potato fritter sandwhich with your favourite fillings for lunch
