spicedchiapuddingAs you know oats are technically not gluten free, I can still eat them, but notice they can leave me feeling a little tired at the end of the day. So I have been experimenting with chai seeds lately as an alternative.

Why I love Chai Seeds

  • Absorb 5 times their liquid and swell up sort of like sago
  • Take on all the flavour of the liquid you soak them in
  • Make a great oat alternative in porridge
  • Are great for beefing up the protein content of a meal
  • Can get sprinkled on smoothies for an instant crunch

Here is a cute little chia pudding I made the other day with spiced flavours.

Ingredients

  • 1/2 Overripe (black almond dead) banana sliced up
  • 2 Tablespoons of chai (it may not look like much but they will swell).
  • 1/2 Teaspoon of cinnamon
  • 2 pinches of ginger
  • 1 pinch of nut meg
  • 2 drops of vanilla essence
  • 2 Tablespoons of coconut cream
  • 3/5 cup of almond milk (you may want to add a little more when you serve it

 

Instructions

  • The night before place all of the ingredients in a jar (I like to use old jam jars as they are a great size and water right
  •  Shake well to make sure the chia are well coating in liquid.
  • Place in the fridge
  • Give them a shake if you find yourself passing by the fridge.
  • Serve in the morning topped with your favorite fruits or nuts. 

 

You can serve them hot for more of a porridge feel or cold if it is not to chilly. If you microwave them make sure to take the lid off the jar, and watch them – I have had them explode on me before – So I like to place them in a bowl before I nuke them.
