I had a reader ask me what I usually eat for lunch. I know for working professionals coming up with lunches you can eat on the go can be hard. So I thought I would throw together some pictures of what the average lunch looks like for me.

I am a things you can dip fiend! I like eating my veggies raw to get all the goodness nature provides and get that crunch.

On my plate you can usually find these various elements (not all at the same time of course)

  • VEGE: carrots, cucumbers, cauliflower, capsicums (marinated or fresh), sugar snap peas,  baby tomatoes,   
  • PROTEIN: salami, tuna, shaved chicken, smoked salmon, steak strips,sausage chunks,  meatballs, hummus, 
  • FAT: feta, tahini, Avocado, Olive oil

OTHER: rice crackers, 

Where possible I try keep the processed stuff to a minimum, using carrots and cucumbers for crackers – but occasionally a girl needs a rice cracker.

Why?

  • Eating vegetables raw takes me longer, I have to chew, so I realize when I am full and stop binge eating
  • amazing crunch and flavor
  • Fresh foods make me feel light and energetic
  • Get more nutrients from the food because they are not lost in cooking
  • More or less paleo lunch option

What else do I put in my gluten free lunch box?

Left overs. The key to cutting down on food prep is making sure I make enough for 2 meals when ever I prepare something. That way I can have a bigger serving at dinner time, and a smaller serving at lunch. 

I always make sure I have Tupperware on hand so I can easily transport my lunch where ever it needs to go. I also bought a cooler lunch box bag, to make sure my food doesn’t spoil if I am in transit (no one wants a soggy salad)
