Gluten Free Chicken & Vege Scamble

I use the word omelet loosely as this was more of a scramble due to my inability to get the pan the right temperature.
Ingredients
- 3 Eggs (size 7)
- 1 Tablespoon crumbled goats feta
- 1/2 c left over roast vegetables cubed
- 1/2 c left over roast chicken shredded
- Salt
- Pepper.
Instructions
- Mix this well a bowl and add to a medium heat pan and reduce the heat to low/medium heat and cover.
- Keep an eye on the mixture to make sure it does not burn - the secret is to cook it slowly so it does not dry out and stick to the pan.
- If you are like me and the omelet just will not omelet... opt for a scramble!
