Gluten Free Recipe: Roast Chicken Stuffed with Lemon and Garlic with Tuscan Roasties

Ingredients
  1. 1 Size 20 Chicken
  2. 1 Roasting Bag
  3. 4 Potatoes
  4. 2 Kumara
  5. 2 Onions
  6. 1/4 Pumpkin
  7. 6 Cloves or Garlic
  8. 3 Lemons
  9. Tuscan Seasoning.
Instructions
  1. Pre-heat the oven to 180
  2. Place Chicken into the roasting bag and Squeeze Lemon onto the chicken. Stuff the Chicken with squeezed lemon and 4 cloves of garlic. Tie the bag and place on an oven tray and into the oven. - Cook for 2 Hours (or until juice runs clear)
  3. Chop the Potatoes, Peeled Kumara, Pumpkin & Onion and remaining garlic and place on a roasting tray. Spray with oil and sprinkle with Tuscan seasoning. (cook for 45mins to 1 hour).
  4. Season with salt and pepper... great with a little feta! YUM
