Gluten Free Recipe: Roast Chicken Stuffed with Lemon and Garlic with Tuscan Roasties

Ingredients
- 1 Size 20 Chicken
- 1 Roasting Bag
- 4 Potatoes
- 2 Kumara
- 2 Onions
- 1/4 Pumpkin
- 6 Cloves or Garlic
- 3 Lemons
- Tuscan Seasoning.
Instructions
- Pre-heat the oven to 180
- Place Chicken into the roasting bag and Squeeze Lemon onto the chicken. Stuff the Chicken with squeezed lemon and 4 cloves of garlic. Tie the bag and place on an oven tray and into the oven. - Cook for 2 Hours (or until juice runs clear)
- Chop the Potatoes, Peeled Kumara, Pumpkin & Onion and remaining garlic and place on a roasting tray. Spray with oil and sprinkle with Tuscan seasoning. (cook for 45mins to 1 hour).
- Season with salt and pepper... great with a little feta! YUM
