potato fritters
Heaven is a place on earth. There is something about these fritters and a perfectly poached egg of glistening gold in the mornings that makes your taste buds sing.

Sweet Potato Fritters Recipie
Makes 6 small fritters (probably enough for 2 starving people or 3 if you serve with eggs and bacon.

Ingredients
  1. 1 cup mashed sweet potato *I used orange kumara
  2. 3 rashers bacon
  3. 1 cup spinach (wilted)
  4. 1/4 Leek
  5. 1/4 Onion
  6. 2 cloves of slow roasted garlic.
  7. Herb and garlic salt.
  8. 1 cup gluten free self raising flour
  9. 2 eggs
  10. 1/2 cup almond milk
  11. Coconut oil.
  12. 1 pinch Cayenne pepper
  13. 1 pinch mustard powder.
  14. 1 pinch curry powder
  15. Salt and pepper to taste.
Instructions
  1. Place a small amount of coconut oil in a pan and add the leek, onion and bacon
  2. Sauté until cooked. Add the cayenne pepper, curry powder and mustard powder and stir through for 30 seconds then remove from heat.
  3. In a bowl place the flour and make a well in the middle, add the two eggs and 1/2 the milk and whisk. Add more milk as needed until you get a thick batter.
  4. Stir in the sweet potato, onions, leek, garlic, spinach and bacon and season with salt and pepper
  5. Mix together into a thick batter (add more almond milk if needed). Should be thicker then a pancake but still slightly sloppy.
  6. Heat a fry pan to a medium heat. Dollop the mixture on the pan and cook until it goes golden on one side, flip and cook on the other side .
  7. Press the top with your finger, if it springs back (rather then squishes when you poke it) then its cooked.
  8. Place in the oven on a low heat to warm and make the remaining fritters.
  9. Serving recommendations
  10. Serve with a poached egg on top and a size of bacon and BBQ sauce. Would also be fab with a side salad if you want it to go further. DELICIOUS.

  1. I have totally reclaimed my cooking mojo this weekend. I have been experimenting with Stuffed Peppers, Sweet Potato Fritters, Home made chocolate ice blocks (gluten and dairy free) and everything has turned out AMAZING... Oh I have a lasagne with potatoes as the pasta layer (which I will be whipping up tonight!
