Gluten Free Breakfast Slow Roasted Tomatoes On Toast

My flatmate has introduced me to the world of slow roasted tomatoes this morning, I am not usually the biggest fan of tomatos, but after roasting in olive oil for several hours last night, the tomatoes turned into a juicy flavour sensation.
Ingredients
- Gluten Free Bread x 2
- 1/2 Avocado
- 1 Slow Roasted Tomato (Toss tomatoes cut in half in olive oil, season with salt and pepper and cook on a low to moderate heat in an oven for 4 hours)
- Crumbled Feta
- Cracked Pepper
Instructions
- I toasted up some gluten free bread, lathered it in avocado (natures butter), crumbled some feta over the top, added lashings of cracked pepper and topped with half a slow roasted tomato.
