Gluten Free Breakfast Loaves Recipe
These are great for gluten free breakfasts. I thaw them out from the freezer the night before... and they are handy to take to school or work...Delish!

Ingredients
  1. 1 Large Kumara Diced
  2. 1 Large Leek Sliced
  3. 2 Grated Zucchini
  4. 1 Cup Gluten Free Baking Mix
  5. 1 Tablespoon Dried Italian Herbs
  6. 4 Eggs
  7. 1/2 Olive or Canola Oil
  8. 1/2 c Rice Milk
  9. 20g Crumbled Sheeps Feta
  10. 1 Cup Chopped Chorizo and Sliced Ham
  11. Salt and Pepper to season.
Instructions
  1. Cook the vegetables in the microwave for 6 minutes on high.
  2. In a large bowl mix the cup of baking mix, herbs, eggs, oil, rice milk, Cheese, Meat and mix well. Add the vegetables and season with salt and pepper.
  3. Spray a deep baking dish or Texas muffin pan with oil.
  4. Cook on 200 Fan bake for 15-20 minutes. Cool for 30 minutes before eating.
