Gluten Free Breakfast Loaves Recipe

These are great for gluten free breakfasts. I thaw them out from the freezer the night before... and they are handy to take to school or work...Delish!
Ingredients
- 1 Large Kumara Diced
- 1 Large Leek Sliced
- 2 Grated Zucchini
- 1 Cup Gluten Free Baking Mix
- 1 Tablespoon Dried Italian Herbs
- 4 Eggs
- 1/2 Olive or Canola Oil
- 1/2 c Rice Milk
- 20g Crumbled Sheeps Feta
- 1 Cup Chopped Chorizo and Sliced Ham
- Salt and Pepper to season.
Instructions
- Cook the vegetables in the microwave for 6 minutes on high.
- In a large bowl mix the cup of baking mix, herbs, eggs, oil, rice milk, Cheese, Meat and mix well. Add the vegetables and season with salt and pepper.
- Spray a deep baking dish or Texas muffin pan with oil.
- Cook on 200 Fan bake for 15-20 minutes. Cool for 30 minutes before eating.
