Gluten Free Mini Meatloaf Recipe

I made these mini meat loaves in my mini muffin pan.
You want to make sure the loaves are well cooked as the mixture is a little on the moist side.
Ingredients
- 400 grams of premium mince
- 4 gluten free sausages raw
- 1 Onion (finely diced)
- 1 Zucchini (grated)
- Teaspoon of Italian herbs
- 1 teaspoon of garlic
- 1 teaspoon of ginger
- 1 teaspoon of chili
- 1 teaspoon of mustard
- 1/2 Cup of gluten free baking mix
- Salt and Pepper to taste.
- Olive Oil
Instructions
- Preheat your oven to 190 Fan bake.
- Place the mince in a bowl.
- Squeeze the inside of the gluten free sausages into the bowl (no need to keep the skins).
- Heat the olive oil in a pan and add the ginger, garlic and onion and saute.
- Add the zucchini, chili and mustard to the onion and garlic mix to soften.
- Place the vegetables and seasoning into the mince along with herbs, salt and pepper and mix well.
- Sprinkle in the gluten free flour a little at a time, you do not want the mixture to be to wet or to dry.
- Grease you mini loaf tins and place two big spoonfuls of mixture into each tin and flatten making even sides loaves.
- Cook for 50 minutes or until they are cooked all the way through.
- Serve with Mash potato, Steamed broccoli and lashings of tomato sauce.
