Gluten Free Mini Meatloaf Recipe
I made these mini meat loaves in my mini muffin pan. You want to make sure the loaves are well cooked as the mixture is a little on the moist side.

Ingredients
  1. 400 grams of premium mince
  2. 4 gluten free sausages raw
  3. 1 Onion (finely diced)
  4. 1 Zucchini (grated)
  5. Teaspoon of Italian herbs
  6. 1 teaspoon of garlic
  7. 1 teaspoon of ginger
  8. 1 teaspoon of chili
  9. 1 teaspoon of mustard
  10. 1/2 Cup of gluten free baking mix
  11. Salt and Pepper to taste.
  12. Olive Oil
Instructions
  1. Preheat your oven to 190 Fan bake.
  2. Place the mince in a bowl.
  3. Squeeze the inside of the gluten free sausages into the bowl (no need to keep the skins).
  4. Heat the olive oil in a pan and add the ginger, garlic and onion and saute.
  5. Add the zucchini, chili and mustard to the onion and garlic mix to soften.
  6. Place the vegetables and seasoning into the mince along with herbs, salt and pepper and mix well.
  7. Sprinkle in the gluten free flour a little at a time, you do not want the mixture to be to wet or to dry.
  8. Grease you mini loaf tins and place two big spoonfuls of mixture into each tin and flatten making even sides loaves.
  9. Cook for 50 minutes or until they are cooked all the way through.
  10. Serve with Mash potato, Steamed broccoli and lashings of tomato sauce.
