I gathered together last nights left overs to make one of the best salads I have had in a long time.
All it took was:
- Left over roast vegetables
- Feta Cubes
- Spinach
- Spring Onion or Red Onion
- Left over spinach and feta pesto.
Microwave for one minute and savor….
To make this into a meal I would add chickpeas for protein.
Warning – SO GOOD you will wish you had more!
